Pages follow the order you selected or dropped the images in. To reorder, remove an image and re-add it — the newest addition always goes to the end.

Does this resize or crop my images?

No — each image is scaled to fit the page while keeping its original aspect ratio, so nothing is stretched or cropped.

Is there a limit to how many images I can combine?

There's no hard-coded limit, but very large numbers of high-resolution images may use a lot of your browser's memory since everything is processed locally rather than on a server.
